- 4 black cod fillets (6 ounces each)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 lemon, zested and juiced
- 1/4 cup unsalted butter, softened
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- 1 garlic clove, minced
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, mix together the softened butter, lemon zest, lemon juice, parsley, dill, chives, and minced garlic. Season with salt and pepper to taste. Set aside.
- Brush the black cod fillets with olive oil and season with salt and pepper.
- Place the fillets skin-side down on the grill. Grill for about 6-8 minutes per side, or until the fish is cooked through and flakes easily with a fork.
- During the last minute of grilling, add a dollop of the lemon herb butter on top of each fillet to melt.
- Remove from the grill and serve immediately, drizzled with any remaining lemon herb butter.
