Ingredients

- 2 cups mixed greens (spinach, kale, romaine)
- 1 avocado, sliced
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh chives, chopped
- 1/4 cup Greek yogurt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Wash and dry all greens and herbs.
- Chop the cucumber and slice the avocado.
- In a large bowl, combine greens, avocado, cucumber, parsley, basil, and chives.
- In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat.
- Serve immediately.
