  • 1 pound fresh green beans, trimmed and cut into 2-inch pieces
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon soy sauce
  • 1/4 teaspoon black pepper
  • 1 cup crispy fried onions, plus more for topping
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of boiling salted water, blanch the green beans for about 5 minutes until tender-crisp. Drain and set aside.
  3. In a mixing bowl, combine the cream of mushroom soup, milk, soy sauce, and black pepper.
  4. Add the blanched green beans to the soup mixture and stir until well combined. Fold in 1 cup of crispy fried onions.
  5. Transfer the green bean mixture to a greased 1 1/2-quart casserole dish and spread it evenly.
  6. Bake in the preheated oven for 25 minutes.
  7. Remove from the oven and sprinkle additional crispy fried onions on top. Return to the oven and bake for an additional 10 minutes until the onions are golden brown.
  8. Let cool for a few minutes before serving.

Notes

  • For a homemade version, you can make the cream of mushroom soup from scratch using fresh mushrooms.
  • Feel free to add cooked bacon or sautéed mushrooms for extra flavor.
  • This casserole can be prepared ahead of time and baked just before serving.
