Description

Tender chicken marinated in Greek yogurt and spices, grilled to perfection, and served over a fresh salad with avocado and chickpeas.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup Greek yogurt
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 avocado, diced
  • 1 cup cooked chickpeas
  • 1/4 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley, chopped

Instructions

  1. In a bowl, mix Greek yogurt, lemon juice, garlic, paprika, cumin, salt, and pepper.
  2. Coat chicken breasts with the marinade and refrigerate for at least 1 hour.
  3. Preheat grill or skillet over medium-high heat.
  4. Grill chicken for 6-7 minutes per side until fully cooked.
  5. Let chicken rest for 5 minutes, then slice.
  6. In a separate bowl, combine avocado, chickpeas, red onion, cherry tomatoes, olive oil, and parsley.
  7. Serve chicken over the avocado-chickpea salad.

Notes

  • For extra flavor, marinate chicken overnight.
  • Substitute chickpeas with lentils if preferred.
