Ingredients

- 2 boneless, skinless chicken breasts
- 1/2 cup Greek yogurt
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 avocado, diced
- 1 cup cooked chickpeas
- 1/4 red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tbsp fresh parsley, chopped
Instructions
- In a bowl, mix Greek yogurt, lemon juice, garlic, paprika, cumin, salt, and pepper.
- Coat chicken breasts with the marinade and refrigerate for at least 1 hour.
- Preheat grill or skillet over medium-high heat.
- Grill chicken for 6-7 minutes per side until fully cooked.
- Let chicken rest for 5 minutes, then slice.
- In a separate bowl, combine avocado, chickpeas, red onion, cherry tomatoes, olive oil, and parsley.
- Serve chicken over the avocado-chickpea salad.
Notes
- For extra flavor, marinate chicken overnight.
- Substitute chickpeas with lentils if preferred.
- Add a pinch of chili flakes for heat.
