- 500g ground beef or lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1/4 cup breadcrumbs
- 1 cup cooked rice
- 1 cucumber, sliced
- 1 tomato, diced
- 1/2 red onion, thinly sliced
- 1/2 cup tzatziki sauce
- Fresh parsley for garnish
Instructions
- Preheat oven to 200°C (400°F).
- Mix ground meat, onion, garlic, oregano, cumin, salt, pepper, egg, and breadcrumbs in a bowl.
- Shape mixture into small meatballs.
- Place meatballs on a baking sheet and bake for 20 minutes.
- Cook rice according to package instructions.
- Prepare vegetables while meatballs cook.
- Assemble bowls with rice, meatballs, vegetables, and tzatziki.
- Garnish with fresh parsley.
Notes
- You can use ground chicken or turkey instead of beef/lamb.
- Make tzatziki ahead for better flavor.
- Leftovers keep well in the fridge for 2 days.
