Ingredients

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 lemons (juiced and zested)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp dried oregano

  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, and oregano. Cook for 5-6 minutes per side until browned. Remove and set aside.
  3. In the same skillet, add garlic and cook for 30 seconds until fragrant.
  4. Stir in orzo, chicken broth, lemon juice, and zest. Bring to a simmer.
  5. Return chicken to the skillet, cover, and cook for 12-15 minutes until orzo is tender and chicken is cooked through.
  6. Garnish with fresh parsley before serving.
