- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 cup feta cheese, crumbled
- 1 cup cooked rice (white or brown)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup tzatziki sauce
- Lettuce leaves for serving
- Olive oil for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine ground lamb, breadcrumbs, onion, garlic, parsley, oregano, salt, pepper, cumin, coriander, and feta cheese. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until meatballs are browned and cooked through.
- While meatballs are baking, prepare the rice according to package instructions and set aside.
- In a serving bowl, layer the cooked rice, then top with baked meatballs, cherry tomatoes, cucumber, red onion, and lettuce leaves.
- Drizzle with olive oil and serve with tzatziki sauce on the side.
