Ingredients

  • 1 pound ground lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 cup feta cheese, crumbled
  • 1 cup cooked rice (white or brown)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup tzatziki sauce
  • Lettuce leaves for serving
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground lamb, breadcrumbs, onion, garlic, parsley, oregano, salt, pepper, cumin, coriander, and feta cheese. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 20-25 minutes or until meatballs are browned and cooked through.
  5. While meatballs are baking, prepare the rice according to package instructions and set aside.
  6. In a serving bowl, layer the cooked rice, then top with baked meatballs, cherry tomatoes, cucumber, red onion, and lettuce leaves.
  7. Drizzle with olive oil and serve with tzatziki sauce on the side.
