- 2 tablespoons Olive oil
- 2 Garlic cloves, minced
- 1 teaspoon Oregano, dried
- 1 teaspoon Cumin, ground
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 cup Tomatoes, diced
- 1 cup Cucumber, diced
- 1/2 cup Red onion, thinly sliced
- 1/2 cup Feta cheese, crumbled
- 1 cup Tzatziki sauce
- 2 cups Cooked rice or quinoa
- to taste Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the ground lamb to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the dried oregano, cumin, salt, and black pepper. Cook for an additional 2-3 minutes to combine flavors.
- In serving bowls, layer cooked rice or quinoa as the base.
- Top with the cooked ground lamb mixture, followed by diced tomatoes, cucumbers, red onion, and crumbled feta cheese.
- Drizzle tzatziki sauce over the top and garnish with fresh parsley.
