- 1 lb (450g) boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 pita breads
- 1 cup tzatziki sauce
- 1 cup chopped tomatoes
- 1 cup shredded lettuce
- 1/2 red onion, thinly sliced
- Feta cheese for topping (optional)
Instructions
- In a bowl, whisk together olive oil, red wine vinegar, garlic, oregano, cumin, paprika, salt, and pepper.
- Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes on each side, or until fully cooked and slightly charred.
- Remove the chicken from the heat and let it rest for a few minutes before slicing it into strips.
- Warm the pita breads on the grill or in a skillet for a few seconds on each side.
- To assemble the gyros, place sliced chicken in the center of each pita, and top with tzatziki sauce, chopped tomatoes, shredded lettuce, red onion, and feta cheese if using.
- Roll the pita around the filling, and enjoy your homemade Greek chicken gyros!
Notes
- For a spicier kick, add some chopped jalapeños or a pinch of cayenne pepper to the marinade.
- Feel free to customize the toppings based on your preference; olives, cucumbers, or bell peppers can also be great additions.
