Delicious homemade Greek chicken gyros, marinated in fragrant spices and served with fresh toppings.


Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup tzatziki sauce
  • 1 cup chopped tomatoes
  • 1 cup shredded lettuce
  • 1/2 red onion, thinly sliced
  • Feta cheese for topping (optional)

Instructions

  1. In a bowl, whisk together olive oil, red wine vinegar, garlic, oregano, cumin, paprika, salt, and pepper.
  2. Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  3. Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes on each side, or until fully cooked and slightly charred.
  4. Remove the chicken from the heat and let it rest for a few minutes before slicing it into strips.
  5. Warm the pita breads on the grill or in a skillet for a few seconds on each side.
  6. To assemble the gyros, place sliced chicken in the center of each pita, and top with tzatziki sauce, chopped tomatoes, shredded lettuce, red onion, and feta cheese if using.
  7. Roll the pita around the filling, and enjoy your homemade Greek chicken gyros!

Notes

  • For a spicier kick, add some chopped jalapeños or a pinch of cayenne pepper to the marinade.
  • Feel free to customize the toppings based on your preference; olives, cucumbers, or bell peppers can also be great additions.
