Description

Greek Chicken Bowls with Orzo and Tzatziki is a flavorful and balanced meal featuring grilled chicken, orzo pasta, fresh vegetables, and creamy tzatziki sauce.

Ingredients

  • boneless, skinless chicken breasts – 500 g (about 1 lb)
  • olive oil – 2 tablespoons
  • lemon juice – 2 tablespoons
  • dried oregano – 1 teaspoon
  • garlic powder – 1 teaspoon
  • salt – to taste
  • black pepper – to taste
  • orzo pasta – 200 g (about 1 cup)
  • cucumber – 1 medium, diced
  • cherry tomatoes – 200 g (about 1 cup), halved
  • red onion – 1 small, thinly sliced
  • tzatziki sauce – 1 cup (store-bought or homemade)
  • fresh parsley – for garnish (optional)

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  2. Cook the orzo: Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  3. Grill the chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 75°C (165°F). Once cooked, let the chicken rest for a few minutes before slicing it into strips.
  4. Prepare the vegetables: While the chicken is resting, prepare the cucumber, cherry tomatoes, and red onion. Arrange them in bowls or on a serving platter.
  5. Assemble the bowls: In each serving bowl, add a generous scoop of cooked orzo. Top with sliced grilled chicken, diced cucumber, halved cherry tomatoes, and red onion rings.
  6. Add tzatziki: Drizzle the creamy tzatziki sauce over the top of each bowl, adding a beautiful contrast to the vibrant ingredients.
  7. Garnish and serve: Optionally, sprinkle fresh parsley over the bowls for added color and flavor. Serve immediately and enjoy your delicious Greek Chicken Bowls!

Notes

  • For added flavor, consider grilling the vegetables alongside the chicken.
  • You can make your own tzatziki by mixing Greek yogurt, grated cucumber, garlic, lemon juice, and dill.
  • These bowls are perfect for meal prep; just keep the tzatziki separate until serving to maintain freshness.
