- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated parmesan cheese (for sauce)
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt and pepper.
- Dredge chicken in flour, dip in beaten eggs, then coat with breadcrumbs and parmesan mixture.
- Heat olive oil in a skillet over medium heat. Cook chicken until golden brown, about 4 minutes per side. Transfer to a baking dish.
- Bake chicken for 15 minutes or until fully cooked.
- In the same skillet, melt butter and sauté mushrooms until tender. Add garlic and cook for 1 minute.
- Pour in heavy cream and chicken broth, then stir in parmesan cheese. Simmer until slightly thickened.
- Pour sauce over cooked chicken and garnish with fresh parsley.
Notes
- Use panko breadcrumbs for extra crispiness.
- For a lighter version, replace heavy cream with half-and-half.
- Serve with mashed potatoes or steamed vegetables.
