Description
A delicious Filipino dish made with squash (kalabasa) and longanisa cooked in coconut milk. This hearty and flavorful dish is perfect served with rice.

- 1 medium kalabasa (squash), peeled and cubed
- 200g longanisa (Filipino sausage), sliced
- 1 can (400ml) coconut milk
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons fish sauce
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Water as needed
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the garlic, onion, and ginger. Sauté until the onion becomes translucent.
- Add the sliced longanisa to the pot and cook until browned.
- Stir in the cubed kalabasa and cook for about 5 minutes, allowing it to absorb the flavors.
- Pour in the coconut milk and add fish sauce. Stir well.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 15-20 minutes or until the kalabasa is tender.
- If the mixture is too thick, add a little water to reach your desired consistency.
- Season with salt and pepper to taste. Stir well and cook for an additional 5 minutes.
- Serve hot with steamed rice.
Notes
- You can add other vegetables like spinach or eggplant for more variety.
- Adjust the level of fish sauce according to your taste preference.
