A warm and tangy German potato salad made with tender potatoes, crispy bacon, and a flavorful dressing.
Ingredients

- 2 pounds small red potatoes
- 1/2 cup diced bacon
- 1/2 cup diced onion
- 1/2 cup apple cider vinegar
- 1/4 cup vegetable oil
- 1 tablespoon Dijon mustard
- 1 tablespoon sugar
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Place the potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly, then slice into thick rounds.
- In a skillet, cook the bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the drippings in the pan.
- Add the onion to the skillet and cook until softened, about 3 minutes.
- In a small bowl, whisk together the apple cider vinegar, vegetable oil, Dijon mustard, sugar, salt, and pepper.
- Add the sliced potatoes and cooked bacon to the skillet with the onions. Pour the dressing over the top and gently stir to combine.
- Serve warm, garnished with fresh parsley.
