  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly, then slice into thick rounds.
  2. In a skillet, cook the bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the drippings in the pan.
  3. Add the onion to the skillet and cook until softened, about 3 minutes.
  4. In a small bowl, whisk together the apple cider vinegar, vegetable oil, Dijon mustard, sugar, salt, and pepper.
  5. Add the sliced potatoes and cooked bacon to the skillet with the onions. Pour the dressing over the top and gently stir to combine.
  6. Serve warm, garnished with fresh parsley.
