Description

A warm and tangy German potato salad made with tender potatoes, crispy bacon, and a flavorful vinegar dressing.


Ingredients

  • 2 pounds small red potatoes
  • 4 slices of bacon, chopped
  • 1 small onion, finely chopped
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon granulated sugar
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, cover the potatoes with water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. While the potatoes are cooking, in a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  3. Add the chopped onion to the skillet and sauté until softened, about 3-4 minutes.
  4. In a small bowl, whisk together the apple cider vinegar, Dijon mustard, sugar, salt, and pepper.
  5. Cut the cooked potatoes into bite-sized pieces and add them to the skillet with the onions and bacon. Pour the vinegar mixture over the potatoes and gently stir to combine.
  6. Cook over low heat for 5-7 minutes to warm the salad and allow the flavors to meld.
  7. Garnish with fresh parsley before serving.

Notes

  • For a vegetarian version, omit the bacon and use olive oil instead.
  • German potato salad is best served warm, but can be enjoyed at room temperature as well.
