Description
A warm and tangy German potato salad made with tender potatoes, crispy bacon, and a flavorful vinegar dressing.

- 2 pounds small red potatoes
- 4 slices of bacon, chopped
- 1 small onion, finely chopped
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon granulated sugar
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, cover the potatoes with water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and let cool slightly.
- While the potatoes are cooking, in a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
- Add the chopped onion to the skillet and sauté until softened, about 3-4 minutes.
- In a small bowl, whisk together the apple cider vinegar, Dijon mustard, sugar, salt, and pepper.
- Cut the cooked potatoes into bite-sized pieces and add them to the skillet with the onions and bacon. Pour the vinegar mixture over the potatoes and gently stir to combine.
- Cook over low heat for 5-7 minutes to warm the salad and allow the flavors to meld.
- Garnish with fresh parsley before serving.
Notes
- For a vegetarian version, omit the bacon and use olive oil instead.
- German potato salad is best served warm, but can be enjoyed at room temperature as well.
