Description

Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 cups tomato juice
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. In a blender or food processor, combine the tomatoes, cucumber, bell pepper, onion, and garlic.
  2. Blend until smooth.
  3. Add the tomato juice, olive oil, red wine vinegar, salt, and pepper.
  4. Blend again until well combined.
  5. Chill in the refrigerator for at least 2 hours before serving.
  6. Serve cold, garnished with fresh basil or parsley.
