Ingredients

  • 1 rack of lamb (about 1.5 lbs)
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp rosemary, chopped
  • 1 tsp thyme, chopped
  • 4 tbsp butter
  • 1/4 cup chicken or beef broth
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub the rack of lamb with olive oil, minced garlic, salt, pepper, rosemary, and thyme.
  3. Place the lamb on a roasting pan and roast for 25-30 minutes for medium-rare or until desired doneness.
  4. While the lamb roasts, melt butter in a small saucepan over medium heat.
  5. Add broth and lemon juice, simmer for 3-4 minutes until slightly thickened.
  6. Remove lamb from oven, let rest for 5 minutes, then slice and serve with butter sauce.
