- 4 large russet potatoes, cut into wedges
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- 1/2 cup mayonnaise
- 1 tbsp sriracha sauce
- 1 tsp lemon juice
Instructions
- Preheat oven to 425°F (220°C).
- Rinse potato wedges and pat dry with a paper towel.
- Toss wedges with olive oil, garlic, salt, black pepper, and paprika.
- Arrange wedges on a baking sheet in a single layer.
- Bake for 25-30 minutes, flipping halfway, until golden and crispy.
- While baking, mix mayonnaise, sriracha, and lemon juice for the spicy mayo.
- Sprinkle parmesan cheese over the wedges right after baking.
- Serve hot with spicy mayo on the side.
Notes
- For extra crispiness, soak potato wedges in cold water for 30 minutes before baking.
- Adjust sriracha amount to control spiciness.
- Use freshly grated parmesan for best flavor.
