Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, mix olive oil, garlic, parmesan, Italian seasoning, salt, pepper, and lemon juice.
  2. Add chicken cubes and coat evenly with the marinade. Cover and refrigerate for at least 30 minutes.
  3. Thread chicken onto skewers, leaving a little space between pieces.
  4. Grill over medium heat for 10-12 minutes, turning occasionally, until chicken reaches 165°F internally.
  5. Serve hot with extra parmesan if desired.
