Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes with 1 tbsp olive oil, salt, pepper, and paprika. Spread on a baking sheet.
  3. Roast potatoes for 20 minutes.
  4. Mix minced garlic, parmesan, oregano, and remaining olive oil in a bowl.
  5. Coat chicken breasts with the garlic parmesan mixture.
  6. Place chicken on the baking sheet with potatoes.
  7. Bake for 25 minutes or until chicken reaches 165°F (74°C).
  8. Serve hot.

  • Use boneless, skinless chicken thighs for juicier results.
