Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped
  • 1 medium zucchini, sliced
  • 1 medium bell pepper, sliced
  • 1 small red onion, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix shrimp with olive oil, garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper.
  3. Spread zucchini, bell pepper, and red onion on a sheet pan.
  4. Arrange shrimp on top of the vegetables.
  5. Bake for 10-12 minutes until shrimp are pink and cooked through.
  6. Sprinkle with fresh parsley before serving.
