Ingredients

- 4 medium potatoes, cubed
- 3 medium carrots, sliced
- 1 large zucchini, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine potatoes, carrots, zucchini, garlic, olive oil, rosemary, thyme, salt, and pepper.
- Toss until vegetables are evenly coated.
- Spread in a single layer on a baking sheet.
- Roast for 30-35 minutes, stirring halfway, until vegetables are tender and golden.
- Serve warm.

- Cut vegetables into even sizes for uniform cooking.
- Fresh herbs can replace dried herbs for a stronger flavor.
- Add a sprinkle of parmesan cheese before serving if desired.
