- 2 boneless, skinless chicken breasts
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 2 tbsp olive oil
- 4 medium potatoes, peeled and cubed
- 1/4 cup milk
- 2 tbsp butter
- 4 medium carrots, peeled and sliced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with 1 tbsp olive oil, salt, and pepper. Roast for 25 minutes.
- Season chicken with garlic, rosemary, thyme, salt, and pepper.
- Heat 1 tbsp olive oil in a pan over medium heat. Cook chicken for 6-7 minutes per side.
- Boil potatoes until tender, about 15 minutes. Drain and mash with milk and butter.
- Serve chicken with mashed potatoes and roasted carrots.
