- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, minced garlic, oregano, thyme, salt, and black pepper.
- Coat chicken breasts with the marinade and let sit for 10 minutes.
- Place chicken on a baking sheet and bake for 20-25 minutes until fully cooked.
- Let chicken rest for 5 minutes, then slice into strips.
- Assemble bowls with quinoa, cherry tomatoes, cucumber, red onion, feta cheese, olives, and chicken.
- Sprinkle with fresh parsley and drizzle with lemon juice before serving.
Notes
- Use fresh herbs if available for better flavor.
- Adjust seasoning to taste.
- Chicken can also be grilled instead of baked.
