Ingredients

- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp dried rosemary
- 1 tbsp dried thyme
- 1 tsp salt
- 1 tsp black pepper
- 4 large potatoes, cubed
- 1 onion, sliced
- 1 cup beef broth
Instructions
- Preheat oven to 350°F.
- Rub beef roast with minced garlic, rosemary, thyme, salt, and pepper.
- Heat olive oil in a large skillet and sear the roast on all sides.
- Place potatoes and onion in a roasting pan.
- Place seared roast on top of potatoes.
- Pour beef broth into the pan.
- Roast for 2 hours or until beef is tender.
- Let rest for 10 minutes before slicing.
