Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 3 cloves garlic, minced
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix mozzarella, cream cheese, garlic, parsley, salt, and pepper.
  3. Flatten chicken breasts with a meat mallet.
  4. Spread cheese mixture evenly on each chicken breast.
  5. Roll up tightly and secure with toothpicks.
  6. Brush with olive oil and coat with breadcrumbs.
  7. Place in a baking dish and bake for 25-30 minutes until chicken is cooked through.
  8. Remove toothpicks before serving.
