Ingredients

  • 2 (8 oz) steaks (ribeye or sirloin)
  • 4 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • 2 cups broccoli florets
  • 4 tbsp butter, softened
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Mix softened butter with minced garlic and thyme. Set aside.
  4. Season steaks with salt and pepper. Cook in a hot skillet for 3-4 minutes per side for medium-rare. Top with garlic butter after flipping.
  5. In the last 5 minutes of roasting, sprinkle cheese over potatoes and return to the oven to melt.
  6. Toss broccoli with olive oil, salt, and pepper. Roast for 15 minutes on a separate tray.
  7. Serve steak with cheesy potatoes and roasted broccoli.
