Ingredients

- 1 lb shrimp, peeled and deveined
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup mashed cauliflower
- 1 cup mashed sweet potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a pan over medium heat.
- Add shrimp and cook for 2 minutes per side.
- Add butter and garlic to the pan, stir until shrimp are coated.
- Season with salt and pepper.
- Mix mashed cauliflower and sweet potatoes in a bowl.
- Serve shrimp over the veggie mash.
- Garnish with fresh parsley.
