Ingredients

- 1 whole chicken (3–4 lbs)
- 4 tbsp unsalted butter, softened
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp paprika
- 1.5 lbs potatoes, cut into chunks
- 1 tbsp olive oil
- 1/2 tsp rosemary
Instructions
- Preheat oven to 375°F (190°C).
- Mix butter, garlic, salt, pepper, thyme, and paprika in a bowl.
- Rub the butter mixture under the chicken skin and all over the outside.
- Toss potatoes with olive oil, salt, pepper, and rosemary.
- Place chicken in a roasting pan and arrange potatoes around it.
- Roast for 1 hour 15 minutes or until internal temperature reaches 165°F.
- Let the chicken rest for 10 minutes before carving.
Notes
- Use a meat thermometer for accurate doneness.
- For extra crispiness, broil for the last 5 minutes.
- Leftovers can be stored for up to 3 days.
