Ingredients

- 1 whole chicken (3–4 lbs)
- 4 tbsp unsalted butter, softened
- 4 cloves garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 lemon, halved
- 1 small onion, quartered
Instructions
- Preheat oven to 375°F (190°C).
- Mix butter, garlic, salt, pepper, thyme, and rosemary in a bowl.
- Pat chicken dry and rub garlic butter mixture under the skin and all over.
- Stuff cavity with lemon and onion.
- Place chicken in a roasting pan and roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
- Let rest 10 minutes before carving.

- Baste chicken halfway through cooking for extra juiciness.
