Ingredients

  • 4 tbsp unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 lemon, halved
  • 1 small onion, quartered

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix butter, garlic, salt, pepper, thyme, and rosemary in a bowl.
  3. Pat chicken dry and rub garlic butter mixture under the skin and all over.
  4. Stuff cavity with lemon and onion.
  5. Place chicken in a roasting pan and roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
  6. Let rest 10 minutes before carving.
