Ingredients

- 1 lb sirloin steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add potatoes and cook for 10-12 minutes until golden and tender.
- Push potatoes to one side of the skillet and add steak bites.
- Cook steak for 3-4 minutes until browned.
- Add butter, garlic, rosemary, thyme, salt, and pepper.
- Toss everything together and cook for 1-2 minutes.
- Remove from heat and serve immediately.
Notes
- Use a meat thermometer to check steak doneness (145°F for medium).
- Substitute dried herbs if fresh are unavailable (use 1/3 the amount).
- Let steak rest at room temperature for 15 minutes before cooking for even doneness.
