Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup sweet corn (fresh or frozen)
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, and paprika, then cook in the skillet for 5-6 minutes per side until browned and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant.
  4. Add zucchini and corn, cooking for 4-5 minutes until tender.
  5. Return the chicken to the skillet and stir to coat with the garlic butter sauce.
  6. Sprinkle with fresh parsley and serve hot.
