- 2 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 cup sweet corn (fresh or frozen)
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt, pepper, and paprika, then cook in the skillet for 5-6 minutes per side until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant.
- Add zucchini and corn, cooking for 4-5 minutes until tender.
- Return the chicken to the skillet and stir to coat with the garlic butter sauce.
- Sprinkle with fresh parsley and serve hot.
