- 2 boneless, skinless chicken breasts
- 4 medium potatoes, diced
- 3 tbsp butter
- 4 garlic cloves, minced
- 1/4 cup grated parmesan cheese
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp chopped parsley
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with olive oil, salt, pepper, and paprika. Spread on a baking sheet.
- Bake potatoes for 25 minutes until crispy.
- Season chicken with salt and pepper.
- In a large skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute.
- Add chicken and cook for 6-7 minutes per side until golden and cooked through.
- Sprinkle parmesan cheese on potatoes and return to oven for 5 minutes.
- Serve chicken with crispy potatoes, garnished with parsley.
