Ingredients

- 6 eggs
- 1 cup cooked sausage, crumbled
- 1/2 cup bell peppers, diced
- 1/2 cup onion, diced
- 1/2 cup shredded cheese
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat.
- Add onions and bell peppers; sauté until soft.
- Add crumbled sausage and cook until heated through.
- In a bowl, whisk eggs, salt, and pepper.
- Pour the egg mixture over the sausage and vegetables in the skillet.
- Sprinkle cheese on top.
- Cook on the stove for 3-5 minutes until the edges set.
- Transfer the skillet to the oven and bake for 15-20 minutes.
- Remove from the oven and let cool slightly before slicing.
Notes
- Feel free to add other vegetables.
- Can be served hot or at room temperature.
- Store leftovers in the refrigerator.
