Ingredients

- 6 large eggs
- 1 cup spinach, chopped
- 1 bell pepper, diced
- 1 small onion, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk the eggs and add salt and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add onion and bell pepper, sauté until soft.
- Add spinach and tomatoes, cook until spinach wilts.
- Pour the egg mixture into the skillet, stirring gently.
- Sprinkle feta cheese on top.
- Bake in the oven for 20-25 minutes, or until eggs are set.
- Let it cool slightly before slicing and serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- You can substitute vegetables based on your preference.
