Ingredients

- 6 eggs
- 1 cup spinach, chopped
- 1 bell pepper, diced
- 1/2 cup onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Add onion and bell pepper, cook until softened.
- Add spinach and cherry tomatoes, cook for 2 minutes.
- In a bowl, whisk eggs, salt, and pepper.
- Pour eggs into the skillet, stir gently.
- Sprinkle feta cheese on top.
- Transfer the skillet to the oven, bake for 15-20 minutes.
- Remove when set and slightly golden.
- Let cool, slice, and serve.
Notes
- Use any vegetables you like.
- Store leftovers in the refrigerator.
