Ingredients

  • 1/2 cup onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add onion and bell pepper, cook until softened.
  4. Add spinach and cherry tomatoes, cook for 2 minutes.
  5. In a bowl, whisk eggs, salt, and pepper.
  6. Pour eggs into the skillet, stir gently.
  7. Sprinkle feta cheese on top.
  8. Transfer the skillet to the oven, bake for 15-20 minutes.
  9. Remove when set and slightly golden.
  10. Let cool, slice, and serve.
