  • 4 cups cooked rice (Preferably day-old rice for best texture)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup carrots, diced
  • 1 cup peas
  • 3 tablespoons soy sauce
  • 2 eggs, beaten
  • 2 green onions, sliced
  • to taste salt and pepper

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and diced onion, sauté until the onion becomes translucent.
  3. Stir in the diced carrots and peas, cooking for another 2-3 minutes until the vegetables are tender.
  4. Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble until fully cooked.
  5. Add the cooked rice to the skillet, breaking up any clumps. Stir everything together.
  6. Pour the soy sauce over the rice mixture and stir to combine. Cook for another 2-3 minutes, allowing the rice to fry slightly.
  7. Season with salt and pepper to taste. Add sliced green onions before serving.
