- 2 cups cooked rice
- 1 cup mixed vegetables
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions
Instructions
- Use day-old rice that has been cooked and cooled.
- Heat vegetable oil in a large pan or wok over high heat.
- Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
- Push the vegetables to one side of the pan and crack the eggs into the empty space.
- Scramble the eggs until fully cooked, then mix with the vegetables.
- Add the rice to the pan and stir to combine with the vegetables and eggs.
- Pour the soy sauce over the rice and mix well to ensure even seasoning.
- Continue to stir-fry the rice on high heat for another 5-7 minutes.
- Add chopped green onions and stir to combine just before serving.
- Serve hot, garnished with additional green onions if desired.
