Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions

Instructions

  1. Use day-old rice that has been cooked and cooled.
  2. Heat vegetable oil in a large pan or wok over high heat.
  3. Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
  4. Push the vegetables to one side of the pan and crack the eggs into the empty space.
  5. Scramble the eggs until fully cooked, then mix with the vegetables.
  6. Add the rice to the pan and stir to combine with the vegetables and eggs.
  7. Pour the soy sauce over the rice and mix well to ensure even seasoning.
  8. Continue to stir-fry the rice on high heat for another 5-7 minutes.
  9. Add chopped green onions and stir to combine just before serving.
  10. Serve hot, garnished with additional green onions if desired.
