- 2 pounds potatoes
- 1/2 cup butter
- 1/2 cup milk

Instructions
- Brine the chicken in buttermilk for at least four hours to enhance tenderness and flavor.
- In a large bowl, mix together the flour, salt, black pepper, paprika, garlic powder, and onion powder.
- Remove the chicken from the buttermilk and let the excess drip off.
- Dredge each piece of chicken in the flour mixture, ensuring it is fully coated.
- Heat oil in a cast iron skillet to a temperature between 325°F and 350°F.
- Carefully place the coated chicken in the hot oil, cooking until golden brown and cooked through, about 15-20 minutes.
- Once cooked, remove the chicken from the skillet and let it rest for at least 10 minutes before serving.
- While the chicken is resting, peel and chop the potatoes into chunks.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add butter and milk to the potatoes, then mash until creamy and smooth.
- Season the mashed potatoes with salt to taste.
