A fresh salad with roasted beets, creamy goat cheese, and a sweet honey mustard dressing.
Ingredients

- 2 medium beets, roasted and sliced
- 4 cups mixed greens
- 1/4 cup crumbled goat cheese
- 1/4 cup walnuts, toasted
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 45-50 minutes until tender. Let cool, then peel and slice.
- In a small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper.
- Arrange mixed greens on a plate. Top with sliced beets, crumbled goat cheese, and walnuts.
- Drizzle the honey mustard dressing over the salad and serve immediately.
Notes
- For extra flavor, add sliced red onions or avocado.
- Store leftover dressing in an airtight container for up to 3 days.
