A rich and savory soup made with caramelized onions, beef broth, and topped with melted cheese and crusty bread.
Ingredients

- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 4 cups beef broth
- 1 cup dry white wine
- 1 teaspoon thyme
- Salt and pepper to taste
- 6 slices of crusty bread
- 1 1/2 cups grated Gruyère cheese
Instructions
- In a large pot, melt the butter and olive oil over medium heat.
- Add the sliced onions and sugar, cooking until the onions are caramelized, about 30-40 minutes, stirring occasionally.
- Pour in the white wine and scrape any bits off the bottom of the pot. Simmer for 5 minutes.
- Add the beef broth and thyme, and bring to a boil. Reduce heat and let simmer for 15-20 minutes. Season with salt and pepper.
- Preheat the oven to 350°F (175°C).
- Ladle the soup into oven-safe bowls. Top each bowl with a slice of crusty bread and sprinkle with Gruyère cheese.
- Place the bowls on a baking sheet and bake in the oven until the cheese is melted and bubbly, about 10-15 minutes.
- Serve hot and enjoy!
Notes
- For added depth, use a mix of beef and chicken broth.
- Feel free to substitute Gruyère with Swiss or mozzarella cheese if desired.
