- 2 boneless, skinless chicken breasts
- 1/4 cup sweet chili sauce
- 1 cup jasmine rice
- 1/2 cup coconut milk
- 1 lime, juiced
- 1 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup chopped cilantro
- 1/4 cup sliced red bell pepper
- 1/4 cup shredded carrots
Instructions
- Cook jasmine rice according to package instructions.
- Season chicken breasts with salt and pepper.
- Heat olive oil in a pan over medium heat and cook chicken for 5-6 minutes per side.
- Brush chicken with sweet chili sauce and cook for another 1-2 minutes.
- In a small bowl, mix coconut milk, lime juice, and honey to make the sauce.
- Slice cooked chicken into strips.
- Assemble bowls with rice, chicken, bell pepper, and carrots.
- Drizzle with coconut lime sauce and garnish with cilantro.
Notes
- You can substitute chicken with tofu for a vegetarian option.
- For extra heat, add chopped red chili to the sauce.
- Serve immediately for best texture.
