Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Season chicken breasts with Cajun seasoning, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken for 5-6 minutes per side until fully cooked. Remove and set aside.
- In the same skillet, sauté onions and garlic for 2 minutes.
- Add bell peppers and cook until tender, about 5 minutes.
- Slice chicken and return to skillet. Mix well.
- Serve hot.
Notes
- Adjust Cajun seasoning to taste.
- Serve with rice or tortillas.
- Store leftovers in the fridge for up to 3 days.
