Description
A classic British dish featuring crispy battered fish served with golden fries.

- 4 pieces cod fillets
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup cold sparkling water
- 1 teaspoon salt
- 4 large potatoes
- for frying vegetable oil
- to taste malt vinegar
- for serving tartar sauce
Instructions
- Peel and cut the potatoes into thick fries. Soak them in cold water for 30 minutes, then drain and pat dry.
- In a bowl, mix together the flour, baking powder, and salt. Gradually whisk in the cold sparkling water until smooth.
- Heat oil in a deep fryer or a large pot to 350°F (175°C).
- Dip each cod fillet into the batter, allowing excess to drip off before carefully placing it in the hot oil.
- Fry the fish for about 5-7 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
- In the same oil, fry the soaked and dried fries until golden and crispy, about 4-5 minutes. Drain on paper towels.
- Serve the fish and chips hot with malt vinegar and tartar sauce.
Notes
- For extra crispy fries, consider double frying them: fry once until soft, cool, then fry again until golden.
- You can substitute cod with haddock or another firm white fish.
