Ingredients

  • 12 oz (340 g) pasta (penne or fusilli recommended)
  • 8 oz (225 g) block of feta cheese
  • 2 cups cherry tomatoes
  • 1/2 cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine the cherry tomatoes, feta cheese, minced garlic, olive oil, oregano, red pepper flakes, salt, and pepper. Mix well.
  3. Place the baking dish in the preheated oven and bake for 30 minutes, or until the tomatoes are blistered and the feta is golden.
  4. While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
  5. Once the feta and tomatoes are done, remove the baking dish from the oven. Use a fork to mash the feta and tomatoes together into a creamy sauce.
  6. Add the cooked pasta to the baking dish and toss until well combined.
  7. Return the dish to the oven and bake for an additional 10 minutes.
  8. Remove from the oven, garnish with fresh basil, and serve with grated Parmesan cheese.

Notes

  • Feel free to add vegetables such as spinach or bell peppers for extra flavor and nutrition.
  • You can use any pasta shape you prefer.
