Ingredients

  • 1 whole chicken (34 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 lemon, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 lb baby potatoes, halved
  • 2 carrots, sliced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub chicken with olive oil, salt, pepper, garlic powder, and paprika.
  3. Stuff chicken cavity with lemon slices and minced garlic.
  4. Place chicken in a roasting pan and pour chicken broth around it.
  5. Add potatoes and carrots to the pan.
  6. Roast for 1.5 hours or until chicken reaches 165°F (74°C).
  7. Let rest for 10 minutes before serving.
