Ingredients

- 1 whole chicken (3–4 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 lemon, sliced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 lb baby potatoes, halved
- 2 carrots, sliced
Instructions
- Preheat oven to 375°F (190°C).
- Rub chicken with olive oil, salt, pepper, garlic powder, and paprika.
- Stuff chicken cavity with lemon slices and minced garlic.
- Place chicken in a roasting pan and pour chicken broth around it.
- Add potatoes and carrots to the pan.
- Roast for 1.5 hours or until chicken reaches 165°F (74°C).
- Let rest for 10 minutes before serving.
Notes
- Use a meat thermometer to check doneness.
- Adjust seasoning to taste.
- Leftovers can be stored for up to 3 days.
