Ingredients

- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken strips and season with garlic powder, salt, and pepper. Cook for about 5-7 minutes until the chicken is cooked through.
- Add the mixed vegetables and ginger to the skillet. Stir-fry for another 5 minutes until vegetables are tender-crisp.
- Pour in the soy sauce and stir well to coat everything evenly. Cook for an additional 2 minutes.
- Serve hot over cooked rice or noodles.
