Ingredients

- 1 lb chicken breast
- 2 cups broccoli florets
- 1 cup rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add chicken breast and season with salt and pepper.
- Cook chicken until golden brown, about 5-7 minutes per side.
- Remove chicken and set aside.
- Add broccoli to the same pan and sauté for 3-4 minutes.
- Add rice and chicken broth, stir and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add chicken back to the pan and cook for an additional 5 minutes.
- Serve hot.
Notes
- Use leftover chicken for quicker prep.
- Substitute quinoa for rice if preferred.
- Add garlic for extra flavor.
