Ingredients
Scale
- 2 lbs of chicken thighs
- 1 cup of butternut squash, diced
- 2 cups of kale, chopped
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 tsp of thyme
- 1 tsp of rosemary
- Salt and pepper to taste
- 2 tbsp of olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix chicken thighs with olive oil, garlic, thyme, rosemary, salt, and pepper.
- Add diced butternut squash and sliced onion to the bowl and toss everything together.
- Transfer the mixture to a baking dish.
- Bake for 30 minutes.
- Stir in the chopped kale and bake for another 10 minutes.
- Serve warm.
Notes
- This dish can be made with other vegetables such as carrots or sweet potatoes.
- Leftovers can be stored in the fridge for up to 3 days.
