Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix chicken thighs with olive oil, garlic, thyme, rosemary, salt, and pepper.
  3. Add diced butternut squash and sliced onion to the bowl and toss everything together.
  4. Transfer the mixture to a baking dish.
  5. Bake for 30 minutes.
  6. Stir in the chopped kale and bake for another 10 minutes.
  7. Serve warm.
