Ingredients

- 1 cup dried cranberries
- 1/2 cup sliced almonds
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp ginger, grated
- 1 clove garlic, minced
Instructions
- In a large bowl, combine shredded chicken, cranberries, almonds, green onions, and cilantro.
- In a small bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, ginger, and garlic.
- Pour the dressing over the salad and toss gently to coat.
- Chill for at least 30 minutes before serving.

- For extra crunch, toast the almonds before adding them.
- Adjust honey or soy sauce to taste.
