- 1 cup (200g) granulated sugar
- 1 cup (240ml) unsalted butter, softened
- 4 large eggs
- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup (120ml) milk
- Powdered sugar for dusting
- Fresh elderflowers for decoration (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the elderflower cordial.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, dust the top with powdered sugar and decorate with fresh elderflowers if desired.
Notes
- For a richer flavor, consider adding a tablespoon of lemon zest to the batter.
- This cake pairs beautifully with a dollop of whipped cream or a scoop of vanilla ice cream.
